Try flying at a higher altitude! Cooler air = cooler engine. Bonus: you get a better view of enemy targets!
In my experience, a gentle descent can help lower oil temperatures. Avoid steep dives though, it can stress your engine!
Honestly, I just avoid flying for too long at max throttle. Simple but effective.
Open your radiators, if your plane has them. It might slow you down a bit but it's worth it to keep your engine cool.
