Just shield and punish! Bowser has a lot of end lag on his moves. Wait for him to attack, block it, then punish with a quick combo.
Honestly, just spam grabs and throws. Bowser is heavy, so he can take a lot of hits, but throws can rack up damage and mess with his positioning.
Pro tip: Stay out of his range and counter when you see an opening. Fast characters like Sheik or Pikachu work wonders against him.
