On consoles, you'll need to delete the game data through the system settings. For example, on PS4, go to 'Settings' > 'Storage' > 'System Storage' > 'Saved Data' and delete the Undertale save file. Simple and effective!
You can reset your stats by deleting the Undertale save files from your PC. Just navigate to the save directory (usually found in C:/Users/[Your Username]/AppData/Local/UNDERTALE) and delete all the files there. Remember to back up if you ever want to restore your progress!
I once messed up my pacifist run and had to start over! Deleting the save files on PC did the trick, no problem!
If you want a fresh start, just wipe your save files. Easy peasy.
