From personal experience, the quickest way is to navigate to your profile, head to the 'About' section, then 'Contact and Basic Info,' and either remove the birthday or make it private. Facebook makes it pretty straightforward!
Settings -> Profile -> Edit Basic Info -> Delete bday. Done.
