To delete your Fortnite account on PS4, you actually need to unlink it from your Epic Games account. Go to the Epic Games website, sign in, and navigate to 'Connected Accounts' in your account settings. From there, you can unlink your PlayStation Network account.

If you want to start fresh, just unlink your Epic Games account and create a new one. Works like a charm!
