It's super easy! Go to the Game tab in the XMB (Cross Media Bar) menu, find the game you want to delete, press Triangle, and select 'Delete.' Confirm the deletion, and voilà, it's gone!

Honestly, why would you want to delete a game? Storage is precious! But if you must, Triangle, Delete, Confirm. Easy peasy!
