How to Delete People from WhatsApp
Open WhatsApp, go to Chats, tap on the chat with the contact you want to delete, then tap their name at the top. In the contact info screen, select 'Edit' (usually a pencil icon) and then you can delete them from your address book. Voila! They won't appear in WhatsApp anymore.

Just remove the contact from your phone's address book. WhatsApp mirrors your phone's contacts, so once they're gone from there, they're outta here!
From my experience, deleting them from the phone's contacts does the trick. It's like magic!
