You don't delete servers, you just abandon them and start anew. Movers and shakers, y'know?
Deleting a V Rising server is like Dracula deleting his own castle - why would you do that?! But seriously, head to the server management settings and hit delete.
If you want to delete your V Rising server, you need to go into the game's interface under the 'Host Dedicated Server' section and find the delete option. Beware though, once it's gone, it's gone for good.
