Open Snapchat, swipe right to go to the Chat screen, tap on your profile icon, and then tap on 'Shortcuts.' Delete the ones you don't want anymore by tapping 'Edit' and then the trash can icon next to them.

Just tap your Bitmoji or profile in the top-left, go to 'Shortcuts,' then hit that delete button. Simple as pie!
