To delete tags in Pokemon GO, open the Pokemon you want to remove the tag from, tap the pencil icon next to the tag, and then tap the 'X' next to the tag name!

I鈥檝e done this a ton of times! Tap the Pokemon, hit the pencil icon by the tags, and tap that little 'X' to delete.

Just press the pencil icon next to the Pokemon's tags and delete鈥攅asy peasy!

You can remove tags by tapping on the Pokemon, choosing the tag pencil icon, and then simply deleting the tag name.
