Detaching a trailer in GTA 5 on Xbox is pretty straightforward! Just press and hold right on the D-pad for a few seconds. Your trailer will unhitch, and you're free to go about your criminal endeavors trailer-free.

From personal experience, pressing and holding right on the D-pad definitely works. Did it during a particularly hectic mission and left the trailer (and the cops) in the dust. Super satisfying!
