Just hold down the PS button until the Quick Menu pops up, then navigate to Sound/Devices > Turn Off Device. Your controller will be disconnected!

Go to Settings > Accessories > Controllers, then select the controller you want to disconnect and choose 'Forget Device.' Easy peasy!

You can also just power off your PS5, and the controller will disconnect automatically. No need to overcomplicate things!
