You'll find crew management under your ship's menu. From there, you can select and dismiss any crew member you no longer need. Simple, right?

I once had to let go of a crewmate who just couldn't stop talking about space lettuce. Just navigate to the crew tab in your ship menu and you'll find the option to dismiss them.
