You need to link your Epic Games account to your PSN account, then check the in-game settings or Epic Games account settings to display the Epic name.

Go to settings in the game, look for account linking options, and select your Epic Games account to make your Epic name show.

I had the same issue! Linking your PSN account to your Epic Games account does the trick. Then check the game's settings and make sure it's set to display your Epic name.
