You can switch to 3rd person in Subnautica by pressing F3 to open the debug menu, then F8 to activate the cursor, unchecking the 'Disable Console' box. After that, press Enter to open the console and type 'imacheater', then 'freecam'—you're now in 3rd person mode!

It’s not officially supported, but you can cheat a bit using the console to get a 3rd person view. Only do it for fun though.
