Okay, first find a ramp or somewhere with a bit of height. Then, while airborne, hold RT and pull back on the left stick. Stick the landing!

I've nailed this trick a thousand times. Approach a ramp, hold RT, flick the right stick up for an ollie, and yank back on the left stick. Enjoy the airtime!
