Honestly, just memorize the Fatality combo for your favorite character. Most are something like Down, Forward, Down, Y (but check the move list).

Hold Block, make sure you're at the right distance, and then input the Fatality sequence fast! Practice makes perfect.

It's all about timing. Look up your character's Fatality moves and practice them in Training Mode until you nail it every time.
