From my experience, using the practice mode to get the moves down pat really helps. Spend some time there and you'll nail those fatalities easily.
If you want to do easy fatalities, you can use the 'Easy Fatality Tokens' available in the game. These can be bought through the in-game store using Koins or Time Krystals!
Honestly, just practice the moves. Memorize them and you'll be pulling them off in no time without any tokens.
