To execute Sub-Zero’s Fatality, Frosty Treat, stand at mid-range and press Back, Forward, Back, Y (Xbox) or Triangle (PS). For his Ice-Cutioner Fatality, stand close and press Down, Forward, Down, X (Xbox) or Square (PS).

I've spent countless hours on MK11, and for Sub-Zero, you really need to remember, Frosty Treat is Back, Forward, Back, Triangle/Y, mid-range; Ice-Cutioner is Down, Forward, Down, Square/X, close. Happy freezing!
