Fatalities are specific to each character. Look them up in the pause menu or online, then practice the inputs for each one.
Personally, I found it easiest to pause the game and check the move list every time I wanted to execute a Fatality. It's all about muscle memory!
Just hold block and mash buttons like there's no tomorrow. If it works, congrats! If not, at least it'll be funny.
