From personal experience, pull up the move list by pausing the game, and you'll find the Fatality inputs there. A little practice and you'll be nailing those finishers!

I recommend practicing Fatalities in Training Mode. Each character has unique combinations, so go to the move list and memorize them. Happy Fatality-ing!
