Basically, you need to have the right characters and items equipped. Use the Potara Earrings for Vegito or the Fusion Dance for Gogeta, and then activate it during battle. Easy peasy!
From my experience, make sure you have the Potara Earrings or Fusion Dance equipped before the match. You'll need enough Ki to pull it off during combat!
