After completing the Genocide Route, restart the game and choose to do a true reset. You'll have to spare everyone to complete the Pacifist Route. It's like going from hardcore mode to peace and hugs!

Honestly, once you've gone full genocide, the game remembers. Even if you go Pacifist next time, some things (like your guilt) will never disappear entirely.
