I update my PS3 by downloading the update from the official PlayStation site onto a USB. Plug it in, go to Settings > System Update > Update via Storage Media.

You can also update via a USB stick! Download the update file from the PlayStation website, move it to a folder named 'UPDATE' in a folder named 'PS3' on your USB drive, and plug it into your console. Go to Settings > System Update > Update via Storage Media.
