Dodging punches in GTA 5 is all about timing! When you're in a fistfight, wait for your opponent to throw a punch. Right as they're about to hit you, press the dodge button (Square on PS, X on Xbox, and Space on PC) and move the left stick in any direction. If you nail the timing, you'll perform a dodge and open them up for a counterattack. Pro tip: mixing up your moves and throwing in some dodges makes melee fights way easier!
