Honestly, just find a game's previous version online. Some sites keep archives of old game patches. Not the most straightforward method, and definitely check the source's credibility to avoid downloading something sketchy.

Downgrading Steam games isn't officially supported, but there's a workaround! You can use Steam Console to access older game versions. Open Steam, go to 'View' > 'Console', and then type 'download_depot' followed by the game's app id and the depot id plus the manifest id of the version you want. It's a bit of a hack but does the trick for most games. Just remember, you're doing this at your own risk since it might break game compatibility or violate terms of use.
