First off, you'll need to Enable Desktop Mode on your Steam Deck. Once in Desktop Mode, open up a web browser and head over to GOG.com. Log into your GOG account, find your game, and hit the download button. After your game's downloaded, you might need a compatible third-party launcher like Lutris or Wine to install and run it. Just download one of those (I recommend Lutris for beginners), install your game through it, and you're golden!

Just boot up into Desktop Mode and download your game directly from GOG. Remember, not all games play nice with Linux straight out of the box, so patience and a bit of tweaking might be required.

From personal experience, using Lutris after downloading your game from GOG works wonders. Made my whole library from GOG accessible on my Steam Deck. A bit of a learning curve, but totally worth it.
