I’ve done this a bunch of times. Go to PlayStation’s website and download the latest PS3 update file. Put it on a USB drive in a folder named 'PS3' with a subfolder named 'UPDATE'. Pop the USB into your PS3, go to 'System Update' and choose 'Update via Storage Media'.
