The easiest way to duplicate items in Skyrim for Xbox 360 is using the 'Companion' glitch. Give the item you want to duplicate to a follower, then tell them to pick up the item again. Leave the area, and then re-enter to find the item duplicated.

I've used the 'Bookshelves' glitch before to duplicate items in Skyrim on the Xbox 360. Just place the item in a bookshelf, then quickly take it back from your inventory screen.
