To unlock characters (aka 'Smashers') in Smash Ultimate, just play through the Classic Mode, defeat challengers, or explore the World of Light adventure mode.
If you're really in a hurry, try the 'Challenger's Approach' feature accessible from the Games & More menu, it lets you rematch any challengers you didn't defeat previously.
Just keep playing! The more battles you win, the more characters you'll unlock. Easy-peasy.
