From my experience, the best way to edit European teams in NBA 2K is through the Roster Creator under Features. Took me a while, but it's super satisfying!
Can't edit Euro teams directly out of the box. You'll need to create a custom roster from scratch. Bit of a hassle, but totally worth it!
