To edit Instagram Highlights, go to your profile, tap on the Highlight you want to edit, and then tap 'More' (three dots) at the bottom right. You'll see options to remove or add stories, change the cover, rename it, or delete the whole Highlight altogether. Easy peasy!
Editing highlights is pointless. You should just make a new one!
