From the XMB (main menu), go to the 'Game' icon, find the disc symbol, press Triangle, and select 'Eject Disc'.

In my experience, it's easier to hold down the PS button, go to 'Controls for Blu-ray Disc' and select 'Eject'. Simple as that!
