Just press the eject button on the front of the console! It's right next to the disc slot.

You can also eject a disc using the controller: go to Home, hover over the game, press the menu button, and select 'Eject Disc.'

Unplug the Xbox One, then gently insert a paperclip into the manual eject hole next to the disc slot. Voila!
