From personal experience, press C to open the menu, go to 'ITEM', find your new weapon, select it, and choose 'USE'. Now you're ready to face those pesky monsters!
It's in the menu under 'ITEM'. Select the weapon and hit 'USE'. Done.
Just go to 'ITEM', pick the weapon, and select 'USE'. It's like 3 clicks, tops.
