For recent messages, you can 'Unsend' them within 10 minutes. Just tap and hold the message, hit 'Remove', and choose 'Unsend for everyone'.
Why delete? Just leave the chat! Problem solved.
Just delete the whole conversation by swiping left on it in the app and tapping the trash can icon. Poof, it's gone!
