I've tried them all! Renaming works like a charm the first time. For Espeon and Umbreon, make sure you walk Eevee as your buddy; evolve during the day for Espeon and at night for Umbreon.

To get specific Eevee evolutions, use the naming trick: rename Eevee to Pyro (Flareon), Sparky (Jolteon), Rainer (Vaporeon), Sakura (Espeon), Tamao (Umbreon), Linnea (Leafeon), Rea (Glaceon), or Kira (Sylveon). After renaming once, walk 10km with Eevee and evolve during the day or night for Espeon/Umbreon, or use Lure Modules for Leafeon/Glaceon.

Just name your Eevee correctly and you'll get the evolution you want. After that, good luck - it's mostly random unless you use special tricks.
