As someone who's done it many times, just befriend Eevee and level it up after the sun sets. Easy peasy, dark and breezy!
Level up your Eevee when it has high friendship during the night, and it'll evolve into Umbreon.
Just make sure your Eevee loves you a lot, then level it up at night. Boom, Umbreon!
High friendship + Night time leveling = Umbreon. No rocket science here!
