First, make Eevee your buddy and walk with it for at least 10 km. After that, evolve it during the day to get Espeon!
Just make it your buddy, walk 10 km, and evolve during day. Easy!
I tried the Sakura name trick and got my Espeon instantly! Make sure it's during the day or it won't work.
