Raise Eevee's friendship to a high level, level it up during the daytime, and voilà, you get an Espeon! No fairy moves allowed though.
To evolve Eevee into Espeon in Pokémon Violet, max out its friendship during the day and make sure it doesn't know any Fairy-type moves. Boom, you've got yourself an Espeon!
