Easiest way: use a special nickname! Name your Eevee 'Sparky' for Jolteon, 'Rainer' for Vaporeon, 'Pyro' for Flareon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon. Just remember, these nicknames work only once per evolution type!

Need Leafeon or Glaceon? Use a Mossy Lure Module for Leafeon or a Glacial Lure Module for Glaceon. Simply be near a PokéStop with the appropriate lure active and evolve your Eevee.
