I usually just press the Xbox button and then hit 'Quit' on the game. You can't miss it!
You can also hold down the Xbox button for a couple of seconds and then press 'Home'. Once you're back to the home screen, you can navigate to the game and quit it from there. Both methods work great!
Just hit the Xbox button, go to the game tile, hit the Menu button, and choose 'Quit'. You're outta there!
