Exiting the taxi job in GTA 5 is super easy! Just press and hold the vehicle exit button while your character is in the taxi. This button varies depending on your platform: for PS4/PS5, it's the triangle button; for Xbox One/Xbox Series X/S, it's the Y button; and for PC players, just hit the F key. Doing this will let your character hop out of the taxi and effectively quit the taxi job.

Tried doing the taxi job for a bit - wasn't for me. Just hit the exit vehicle button (yeah, same one you use to get out of cars normally) and you're done. Freedom!
