Honestly, beating the game without tweaking the Avatar Project timer is a rite of passage. But if you must, mods are the way to go.

Go to: C:/Program Files (x86)/Steam/steamapps/common/XCOM 2/defaultgamecore.ini and change 'AVATAR_PROJECT_*' lines to extend the timer. Make sure to backup the file first!

I used the 'Pavonis Interactive's Long War 2' mod. It doesn't just mess with the Avatar Project; it adds a ton of other content too. Total game-changer!
