Honestly, just keep grinding through whatever area you're most comfortable with. More fights = more gold. Simple as that.
Best way to farm gold in Undertale Monster Mania is to keep replaying the Ruins or Snowdin areas. The monsters there are pretty easy to defeat and drop decent gold!
You could try going back and fighting the bosses again if you're up for a challenge! They tend to drop a ton of gold.
