Check the move list for each character in the pause menu; Fatalities are listed there with the required button combinations.

Just press pause during a match, go to move list, and find your character's Fatality combo there! Easy peasy.

Practice makes perfect—spend some time in the training mode to nail those Fatalities down.

Remember to be at the correct distance from your opponent when performing a Fatality. Some need to be close while others need mid or far range.
