Honestly, the easiest way to take down a Wyvern is with a Daedalus Stormbow combined with Holy Arrows. This combo rains down a torrent of arrows that can track and damage the Wyvern massively, especially when it's coming straight at you. Make sure you have a broad space to move and keep your health up with potions!

Always come prepared with high-tier armor and weapons. Wyverns spawn high in the sky, so a sky bridge or arena can give you the mobility you need to dodge attacks. Ranged or magic weapons are highly recommended because you can keep your distance. Don't forget to stock up on healing potions and have a decent set of wings or a grappling hook to maneuver around the wyvern's charges.
