Just go to the Hallow and wait. Seriously, it's not rocket science. Daytime's your best bet.

Found my first unicorn near a bunch of those rainbow trees in the Hallow. Wasn't even looking for one, it just appeared! So yeah, just hang around the Hallow. They'll show up eventually.
