Super simple! Turn on your Xbox 360, go to System Settings > Network Settings > Configure Network, and you'll see your IP Address in the 'Basic Settings' tab.

Just hit up System Settings from the Dashboard, go to Network Settings, select Wired or Wireless depending on your setup, choose Configure Network, and your IP address will be right there on the 'Basic Settings' screen.

From my own experience, if you go to System Settings then Network Settings and select your connection, you can find it under Configure Network.
