I just used the search function in File Explorer and typed 'StateOfDecay2-UWP64-Shipping.exe'. Found it in seconds!
If you installed it through the Xbox app, the executable might be in a hidden WindowsApps folder. Change the folder view settings to show hidden items.
Try looking in your Steam library folder or the default location where you install games. It's usually there!
